Lunar New Year Macadamia Cookies

Celebrate the Year of the Dragon with these melt-in-your-mouth, dairy-free cookies made from only 6 ingredients! The stars of the show are the aromatic Vanilla Happy Nut macadamias spread throughout the dough and bejewel the glazed tops. This recipe makes 12x 15g cookies.

INGREDIENTS

225g pack of Vanilla Happy Nut Macadamias
65g plain flour, sifted
40g icing sugar, sifted
Pinch of salt
30g vegetable or coconut oil
1 egg yolk


METHOD

Preheat a fan forced oven to 170 C. Crack open the Happy Nut macadamias using the included key and set aside 12 halved kernels. Finely chop the rest of them. 

In a large bowl, combine the plain flour, icing sugar, salt and finely chopped macadamias. Pour in the oil and mix until the dough comes together into a ball. Roll out 15g portions of the dough into small balls and place them onto a lined baking tray.

Gently press half a macadamia onto each ball. Whisk the egg yolk and brush it on top of each cookie. Bake in the oven for 15 minutes or until golden. Allow them to cool completely and enjoy!
